How to Make Zuppa Toscana:

  1. Start by preparing your ingredients: chop the kale, onion, bacon, and potatoes, and slice the sausage.
  2. Begin cooking the onions, bacon, and sausage in your crockpot or cooking device. Add the potatoes once the onions become translucent.
  3. Once the ingredients start to soften, add enough chicken stock to cover everything. Remember, you still have more ingredients to add, so don’t fill it to the top.
  4. Let the mixture cook. If you’re using a crockpot, you can set it on high for about 2.5 to 3 hours or on low for about 5 hours.
  5. About 30 minutes before the cooking time is up, add the kale and the half-and-half or heavy whipping cream. Stir well.
  6. For an extra kick, add some Parmesan cheese and stir it in.
  7. If you want to thicken the broth a bit, you can crush some Ritz crackers or toasted crackers until they’re fine, like flour, and add a little bit to the soup.
  8. Serve the soup with some Italian bread on the side, and enjoy!
